Abstrak Kualitas buah jambu biji sangat menentukan daya tarik bagi konsumen. Jambu biji berkualitas baik mempunyai harga jual lebih tinggi. Kualitas buah jambu dikriteriakan berdasarkan ukuran, tingkat kematangan, warna, dan ada tidaknya cacat. Penelitian ini bertujuan untuk mempelajari sifat fisik dan mekanik buah jambu biji serta melakukan validasi pengelompokan kualitas yang dilakukan oleh pekerja dibandingkan terhadap standar yang digunakan. Sampel buah jambu yang digunakan sebanyak 150 buah diperoleh dari salah satu industri budidaya buah jambu biji di provinsi Lampung. Parameter kualitas yang diamati adalah diameter, bobot, panjang, volume, dan kekerasan buah jambu. Bobot pada hasil penelitian masuk ke dalam SNI (>450 gram), namun pada bobot yang berada dalam kebijakan standar yang dimiliki oleh salah satu industri budidaya buah jambu biji di provinsi Lampung tidak masuk ke dalam standar perusahaan (bobot buah kurang dari 700-800 gram). Begitu juga halnya dengan diameter, tidak masuk ke dalam kualitas SNI (diameter buah kurang dari 100 mm), sehingga rata rata buah jambu masuk dalam kualitas grade D. Hasil penelitian menyimpulkan bahwa standar di industri buah jambu masuk dalam kode ukuran 3 dan 4 menurut SNI, dikarenakan pengelompokan buah jambu biji diukur berdasarkan pada justifikasi subjektif para pekerja saat pemanenan di lapangan, dimana bobot yang dihasilkan reratanya antara 500 gram-800 gram, dengan tingkat kematangan antara 60-90%. Kata Kunci : Mutu buah, Jambu Biji, Pasca Panen Abstract The guava furit quality affects the appeals of customers. Good quality guava fruit has a higher selling price. The guava fruit qualities are classified based on size, ripeness degree, color, and defect. The objectives of this research were to study the physical and mechanical properties of guava and to validate the quality classifications conducted by workers based on the standards. About 150 samples of guava fruits were obtained from a guava cultivation industry in Lampung province. The quality parameters were observeb such as diameter, weight, length, volume, and fruit hardness. Fruit weight in this research met the SNI standard (>450 gram), however fruit weight standard policy possessed by one of guava cultivation industry in Lampung province was not belonging to the industry standard (fruit weight was less than 700-800 gram). The fruit diameter in this research did not meet to SNI quality (less than 100 mm), so that averagely the diameter of the guava fruits belonged to grade D. The results concluded that standards in guava industry belonged to measurement code 3 and 4 according to SNI, because the guava classifications were measured based on subjective justifications of workers when harvesting the guava fruits in the fields, where the average of fruit weights were 500-800 grams with ripeness degree of 60-90%.
