Abstrak Wortel merupakan salah satu jenis komoditi yang berguna untuk kesehatan tubuh. Umur simpan yang panjang dan kesegaran merupakan parameter yang penting bagi konsumen. Masalah pasca panen wortel adalah cepat menurun mutunya, karena proses fisiologis tetap berlangsung, setelah wortel dipanen. Kondisi penyimpanan tidak optimal, mutu dan bobot wortel akan berkurang. Untuk memperpanjang umur simpan wortel dapat disimpan di dalam pasir atau serbuk gergaji. Pasir dan serbuk gergaji diletakan didalam tabung logam. Tabung logam diletakkan di dalam air. Fungsi air adalah untuk menurunkan suhu pasir atau serbuk gergaji. Teknologi ini dibutuhkan oleh petani wortel untuk mempertahankan mutu wortel. Teknologi ini dapat menurunkan respirasi dan penguapan air. Tujuan penelitian adalah untuk menpelajari pengaruh pasir atau serbuk gergaji terhadap qualitas wortel ketika sedang disimpan, jumlah massa air berpengaruh terhadap suhu pasir atau serbuk gergaji dan mempelajari umur simpan wortel yang disimpan didalam pasir atau serbuk gergaji. Penelitian ini menggunakan dua perlakuan yaitu jumlah air menyelimuti tabung logam (permukaan air lebih tinggi dari permukaan pasir, permukaan air sama dengan permukaan pasir, dan permukaan air lebih rendah dari permukaan pasir) dan dua jenis media penyimpanan (pasir dan serbuk gergaji). Wortel diletakan diatas lantai didalam ruang sebagai control. Parameter yang diamati adalah suhu pasir, penurunan bobot wortel, total padatan terlarut (TPT), dan umur simpan. Hasil peneltian menunjukkan bahwa umur simpan wortel yang disimpan didalam pasir lebih lama dari wortel disimpan didalam serbuk gergaji. Umur simpan maksimum wortel yang disimpan didalam pasir adalah 26 hari dan umur simpan wortel yang disimpan didalam serbuk gergaji adalah 14 hari. Sementara umur simpan wortel yang diletakkan diatas lantai didalam ruang (control) adalah 4 hari. Rata-rata umur simpan wortel 20 hari. Jumlah massa air dapat mempengaruhi umur simpan wortel yang disimpan didalam media pasir atau serbuk gergaji. Semakin besar massa air menyelimuti tabung logam, maka suhu pasir akan lebil rendah dan umur simpan wortel akan lebih lama. Umur simpan yang terlama pada penelitian ini adalah 26 hari yang wortel disimpan didalam pasir dan permukaan air setara tinggi dari permukaan pasir. The long of life time and freshness are important parameter for consumer. The postharvest problem of carrot is fast deterioration of quality, because the physiological processes still go on, after it is harvested. The storage condition is not optimal, The quality and mass carrot will be reduced. To prolong the life time of carrot could stored in sand or sawdust. The sand or sawdust was put into metal container. The metal container was put into water. The function of water is to countdown the sand or sawdust temperature. This technology is needed by carrot farmer for maintaining of carrot quality. This technology can decrease respiration and transpiration. The objective of research were study to affected sand or sawdust to carrot quality when it is storing, the amount of mass of water affected to the temperature of sand or sawdust and to study the life time of carrot that was stored in sand or sawdust. This research uses two treatment are the amount of water is covered the metal container ( water surface higher than sand or sawdust surface, water surface the same of sand or sawdust surface and water surface lower than sand or sawdust surface) and two kind of medium storing (sand and sawdust). The carrot was put on the floor in room as control. The parameter of observation are sand temperature, decreasing of carrot mass, total soluble solid (TSS), and life time. The result of the research is the life time of carrot that was stored in sand medium longer than it has stored in sawdust. The maximum life time of carrot that was stored in sand was 26 days and it was stored in sawdust was 20 days. Meanwhile the maximum life time of carrot that was put on the floor in room (control) was 4 days. The average life time of carrot was 20 days. The amount of mass of water could affect life time of carrot that it was stored in sand or sawdust medium. The greater amount of mass of water covered the metal container, then sand temperature would be lower and the life time of carrot would be longer. The longest of life time at this research was 26 days that it treated at the carrot was stored in sand and water surface the same as sand surface.
