Abstrak

Penelitian ini bertujuan untuk mengetahui dan menguji cemaran Escherichia coli, Salmonella sp dan total mikroba pada Bakso dan Sosis di Pasar Tradisional Kota Bandar Lampung. Metode penelitian yang digunakan adalah metode Deskriptif dengan 3 kali ulangan. Penelitian ini menggunakan sampel bakso dan sosis yang diambil secara acak dari 6 jenis pasar yang terpilih. Uji mikrobiologis yang diteliti meliputi Escherichia coli, Salmonella sp dan total mikroba. Hasil penelitian menunjukan bahwa pH sampel bakso dan sosis tergolong normal yaitu 5,82 - 6,33 (sampel bakso) dan 5,47 – 5,80 (sampel sosis). Pengujian Escherichia coli hanya positif pada sampel dari Pasar Tamin yaitu dengan nilai rata- rata masing- masing sampel 7,67 x 103 koloni/gram (sampel bakso) dan 1,67 x 103 koloni/gram (sampel sosis) dan telah melebihi standar SNI 7388 : 2009 tentang Batas Maksimum Cemaran Mikroba (BMCM) yaitu < 3 x 101 koloni/ gram. (BMCM) . Salmonella sp negatif, total plate count (TPC) sampel bakso dan sosis lebih besar dari SNI yaitu 1.0 x 105 koloni/gram atau 5 log cfu/g dengan nilai log tertinggi 7,73 (sampel bakso) dan 7,36 (sampel sosis) yang berasal dari Pasar Tugu dan Koga. Jumlah total mikroba dalam penelitian ini belum memenuhi SNI 7388 : 2009 tentang Batas Maksimum Cemaran Mikroba (BMCM) . Kata kunci : Survei Cemaran mikroba, Escherichia coli, Salmonella sp, TPC, Bakso dan Sosis,Pasar Tradisional Bandar Lampung. ABSTRACT The aim of this study was to know and test of Escherichia coli , Salmonella sp and total microbes on the meatballs and sausages in The Traditional Markets in The City of Bandar Lampung. The research method That was used is a descriptive method with 3 replications. This research using samples of meatballs and sausages with taken randomly from 6 types of selected market. Microbiological tests in the observations were Escherichia coli , salmonella sp and total microbes. The results show that the pH meatballs samples and sausages is classified as normally were 5.82 - 6,33 (meatballs samples) and 5.47 - 5.80 (sausages samples). The positive examination of the Escherichia coli only on the samples from the Pasar Tamin with average value of each sample 7.67 x 10 3 colony/gram (meatballs samples ) and 1.67 x 10 3 colony/gram (sausages samples) and has exceeded the standard of SNI 7388 : 2009 about The Maximum Limit of The Microbes (BMCM) is < 3 x 10 1 colony/ gram . (BMCM) . Salmonella sp negative, total plate count (TPC) meatballs and sausages sample more than from v SNI is 1.0 x 10 5 colony/grams or 5 logged 10' CFU/g with the value of the highest log 7,73 (samples meatballs) and 7,36 (sample) sausages from the Tugu and Koga Market. The total number of microbes in this research not fulfill SNI 7388 : 2009 about the maximum limit of the microbes (BMCM) .
