ABSTRAK PENGARUH LAMA PENYIMPANAN TERHADAP KUALITAS INTERNAL TELUR AYAM RAS FASE PRODUKSI KEDUA Oleh Repilina Sihombing Telur adalah produk peternakan yang kaya gizi dan sangat dibutuhkan oleh tubuh karena merupakan sumber protein, lemak, dan mineral yang murah dan dapat dijangkau oleh semua kalangan masyarakat. Namun, telur merupakan produk peternakan yang mudah rusak. Ayam ras fase produksi kedua berumur 42--72 minggu menghasilkan telur yang memiliki luas permukaan besar, kerabangnya tipis, sehingga menyebabkan pengeluaran CO2 dan H2O melalui pori-pori selama penyimpanan cepat, sehingga laju penurunan kualitas internal telur semakin cepat. Tujuan penelitian ini adalah (1) mengetahui pengaruh lama penyimpanan telur terhadap kualitas internal telur dan (2) mengetahui lama simpan terbaik terhadap kualitas internal telur ayam ras pada fase produksi kedua. Penelitian ini dilaksanakan pada 25 September--09 Oktober 2013 bertempat di Laboratorium Produksi dan Reproduksi Ternak, Jurusan Peternakan, Fakultas Pertanian, Universitas Lampung. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) dengan 4 perlakuan lama penyimpanan telur selama 1, 5, 10, dan 15 hari. Pada setiap perlakuan menggunakan 15 butir telur sehingga jumlah seluruh telur yang digunakan sebanyak 60 butir. Data yang diperoleh diuji sesuai dengan asumsi sidik ragam. Bila terdapat peubah yang nyata dilakukan uji Duncan pada taraf nyata 5%. Hasil penelitian ini menunjukkan bahwa perlakuan penyimpanan telur memberikan pengaruh nyata (P<0,05) terhadap penurunan berat telur, nilai HU, pH telur, dan skor warna kuning telur. Penyimpanan telur selama 5 hari memiliki skor terbaik berdasarkan penurunan berat telur yang terendah (1,44%) dan nilai HU (55,38) tergolong kualitas B, dibandingkan dengan lama penyimpanan 10 dan 15 hari. ABSTRACK EFFECT ON THE QUALITY OF INTERNAL STORAGE LAYER EGGS SECOND PHASE By Repilina Sihombing Eggs are a nutrient-rich livestock products and are needed by the body as a source of protein, fat, and minerals are cheap and affordable for all people. However, the egg is a perishable farm products. The second phase of broiler production was 42-72 weeks to produce eggs which have a large surface area, thin shell, causing release CO2 and H2O through the pores for fast storage, so that the rate of decline in internal egg quality the faster. The purpose of this study is (1) determine the effect of egg storage time on the internal quality of eggs and (2) determine the best long shelf against internal quality egg production in the second phase. This research was carried out on September 25 -- October 9, 2013 is housed in the Laboratory Animal Production and Reproduction, Department of Animal Husbandry, Faculty of Agriculture, University of Lampung. This study uses a completely randomized design (CRD) with 4 treatments egg storage time for 1, 5, 10 and 15 days. The data obtained were tested in accordance with the assumption of variance. If there is a real variable Duncan test at 5%. The results of this study showed that treatment of egg storage significant effect (P <0.05) on egg weight, HU, an increase in the pH of the egg, and egg yolk color score. Storage of eggs for 5 days had the highest score based on the value of HU (55.4) classified as B quality, egg weight is still low (1.4%), and is the best store longer than 10 and 15 days of storage.
