Abstrak

Penelitian ini bertujuan untuk mengetahui dan mengidentifikasi cemaran Escherichia coli, Salmonella sp dan total mikroba pada Mie ayam bakso di kantin Ekonomi Universitas Lampung. Metode penelitian yang digunakan adalah metode Deskriptif dengan 3 kali ulangan. Penelitian ini menggunakan sampel mie ayam bakso yang diambil secara purposive sampling dari 6 kantin. Uji mikrobiologis yang diteliti meliputi Escherichia coli, Salmonella sp dan total mikroba. Hasil penelitian menunjukan bahwa identifikasi Total Plate Count (TPC), sampel bakso dan sosislebih besar dari SNI yaitu1.0 x 105koloni/gram atau 5 log cfu/g dengan nilai log tertinggi pada sampel mie ayam bakso adalah 1,1 x 104. Jumlah total mikroba dalam penelitian ini telah memenuhi SNI 7388 : 2009 tentang Batas Maksimum Cemaran Mikroba (BMCM) .Salmonella sp negatif, Escherichia coli negative standar SNI 7388 : 2009 tentang Batas Maksimum Cemaran Mikroba (BMCM) yaitu< 3 x 101koloni/ gram.(BMCM) Kata kunci : Survei Cemaran mikroba, Escherichia coli, Salmonella sp, TPC, Mie ayam bakso di kantin fakultas EkonomiUniversitas Lampung ABSTRACT The aim of this study was to know and identify of Escherichia coli, Salmonella spand total microbes on the meatballs and sausages in the noodle chicken meatballs in the cafeteria of Economics, University of Lampung. The research method that was used is a descriptive method with 3 replications. This research using samples of noodle chicken meatballs with taken randomly from 6 types of selected market. Microbiological tests in the observations were Escherichia coli, salmonella spand total microbes. The results show thatthe identification of Total Plate Count (TPC), meatballs and sausage samples greater than SNI ie 1.0 x 105 colonies / gram or 5 log cfu / g with the highest log value in samples of chicken noodle meatball was 1.1 x 104. The total number of microbes in this study has met the ISO 7388: 2009 limit of Microbial Contamination (BMCM). Salmonella sp negative, negative Escherichia coli standard ISO 7388: 2009 Limit of Microbial Contamination (BMCM) ie<3 x 101 colonies / gram.
