UKM Roti Tugu merupakan salah satu perusahaan yang bergerak dalam bidang produksi roti. Saat ini UKM Roti Tugu belum mempunyai pedoman untuk mewujudkan terbentuknya komposisi jumlah produksi secara tepat berdasar perhitungan. Oleh karena itu UKM Roti Tugu sering mengalami kesulitan dalam beberapa hal diantaranya adalah antisipasi terhadap perubahan penambahan, penyediaan bahan baku, penentuan keuntungan yang maksimum. Tujuan penelitian ini adalah untuk menganalisa produksi optimum masing-masing roti agar diperoleh keuntungan maksimum. Data yang digunakan dalam penelitian ini adalah data primer dan sekunder yang didapatkan dari wawancara dan studi kepustakaan. Penelitian ini dilaksanakan dari Desember 2017 sampai Juni 2018. Tahapan penelitian ini meliputi: (1) Persiapan, (2) Pengumpulan data, (3) Pengolahan data, (4) Analisis optimasi menggunakan POM QM for Windows. Berdasarkan hasil penelitian diperoleh kesimpulan: (1) Untuk mencapai keuntungan maksimum maka dalam setiap harinya UKM Roti Tugu disarankan untuk memproduksi roti isi sebanyak 4.856 unit, roti tawar putih sebanyak 16 unit, roti tawar manis sebanyak 304 unit, dan cheese cake sabanyak 35 unit, (2) Keuntungan yang akan diperoleh UKM Roti Tugu pada kondisi optimum adalah sebesar Rp. 5.343.024, dengan kondisi dan batasan sesuai dengan perhitungan. Berdasarkan analisis sensitivitas, harga roti isi dapat berubah dari harga Rp. 2.345 sampai Rp. 2.607, harga roti tawar putih dapat berubah dari harga Rp.3.622 sampai Rp. 4.550, harga roti tawar manis dapat berubah dari harga Rp.7.394 sampai Rp. 12.895, dan harga cheese cake dapat berubah dari harga Rp.78.382 sampai Rp. 87.261. Kata kunci: UKM Roti Tugu, linear programming, optimasi produksi, analisis sensitivitas ABSTRACT UKM Roti Tugu is one of the companies engaged in the production of bread. Currently, Tugu Roti UKM has no guidelines to realize the exact composition of production quantities based on calculations. Therefore, Tugu Roti SMEs often experience difficulties in several ways including anticipation of changes in additions, provision of raw materials, determination of maximum profits. The purpose of this study was to analyze the optimum production of each bread to obtain maximum profit. The data used in this study are primary and secondary data obtained from interviews and literature studies. This research was carried out from December 2017 to June 2018. The stages of this study include: (1) Preparation, (2) Data collection, (3) Data processing, (4) Optimization analysis using QM for Windows POM. Based on the results of the research, it can be concluded that: (1) To achieve maximum profit, in every day UKM Roti Tugu is recommended to produce 4,856 units of sandwiches, 16 units of white bread, 304 units of sweet bread, and 35 units of cheese cake, (2) The profit that will be obtained by UKM Tugu Bread in optimum condition is Rp. 5,343,024, with conditions and restrictions according to calculations. Based on the sensitivity analysis, the price of sandwiches can change from the price of Rp. 2,345 to Rp. 2,607, the price of white bread can change from the price of Rp. 3,622 to Rp. 4,550, the price of sweet plain bread can change from the price of Rp.7,394 to Rp. 12,895, and the price of cheese cake can change from the price of Rp.78,382 to Rp. 87,261.
