This research aims to analyze the raw material procurement system based on the elements of raw materials, the performance of production, and the added value of the products tofu agroindustry in Gadingrejo Subdistrict, Pringsewu Regency. The research method used a case study method on Tahu Ibu Lis Agroindustry in Gadingrejo Village. The location was determined purposively with the consideration that the Tahu Ibu Lis Agroindustry is the largest tofu in Gadingrejo Subdistrict. Tahu Ibu Lis Agroindustry had many products there are tahu pong, tahu kepal, tahu putih, tahu sayur, tahu asin, tahu kuning, oncom and keripik tahu. Research conducted from Mei to June 2019 and the data analysis method used in this research was qualitative and quantitative descriptive analysis and analysis of added value. The study shows that agroindustry has fulfilled by six components of raw materials procurement, there are time, place, price, type, quality and quantity. The production performance of the agroindustry had not been good because two of the six components of production performance, namely capacity and flexibility are not yet in accordance. Tahu Ibu Lis Agroindustry has added value in the range of Rp. Rp. 7,106.64 - Rp. 24,724.01 and make it viable to work on because it provides positive added value. Key words: Added value,performance of production, tofu Penelitian ini bertujuan untuk menganalisis sistem pengadaan bahan baku, kinerja produksi dan nilai tambah agroindustri tahu di Kecamatan Gadingrejo, Kecamatan Pringsewu. Metode penelitian yang digunakan dalam penelitian ini adalah metode studi kasus pada Agroindustri Tahu Ibu Lis di Pekon Gadingrejo. Penentuan lokasi dilakukan secara sengaja (purposive) dengan pertimbangan bahwa agroindustri ini merupakan salah satu agroindustri pada sentra produksi tahu terbesar di Kecamatan Gadingrejo. Agroindustri Tahu Ibu Lis memiliki banyak produk diantaranya tahu pong, tahu kepal, tahu putih, tahu kuning, oncom dan keripik tahu. Penelitian dilaksanakan pada Mei – Juni 2019 dan metode analisis data yang digunakan adalah metode analisis deskriptif kualitatif dan kuantitatif dan analisis nilai tambah. Hasil penelitian ini menunjukkan bahwa sistem pengadaan bahan baku telah memenuhi 5 komponen diantaranya produktivitas, kapasitas, kualitas, kecepatan pengiriman, fleksibilitas dan kecepatan proses. Kinerja produksi pada agroindustri tersebut belum cukup baik karena dua dari enam komponen kinerja produksi yaitu kapasitas dan fleksibilitas belum sesuai. Agroindustri Tahu Ibu Lis memberikan nilai tambah pada kisaran Rp. 7.106,64 - Rp. 24.724,01 sehingga layak untuk diusahakan karena memberikan nilai tambah yang positif.
