Background: Free radical contained in the used cooking oil is known to cause the coronary artery. Star fruit (Averrhoa bilimbi L.) contains many antioxidant such flavonoid, tanin, and saponin which known to reduce coronary artery damage due to the used cooking oil. Objectives: To determine the effect of star fruit extract (Averrhoa bilimbi L.) on the coronary artery histopathology of Wistar white rats induced by used cooking oil. Methods: Laboratory experimental research with a Post Test-Only Control Group Design pattern. Research using 25 rats which divided into 5 groups, namely K1 (aquades), K2 (used cooking oil), P1, P2, P3 given used cooking oil at a dose of 1,5 mL and extract with different doses (80 mg, 160 mg, and 320 mg) for 28 days. Results: The results showed that the mean of coronary artery lumen diameter of the rats are K1=121,27 μm; K2=64,55 μm; P1=81,79 μm; P2=98,34 μm; P3=12,27 μm. Statistical analysis using One Way ANOVA parametric test (p<0,05) followed by the Post-hoc LSD test (p<0,05) showed, that there are significant differences in most groups, except for P1 with P2 groups. Conclusion: There is an effect of extract of Averrhoa bilimbi L. administration on the coronary artery histopathology of albino rats (Rattus novergicus) Wistar strain induced by used cooking oil. Keywords : Star fruit (Averrhoa bilimbi L.), Coronary Artery, used cooking oil Latar Belakang: Penggunaan minyak jelantah dapat menyebabkan kerusakan pada arteri koronaria karena mengandung radikal bebas. Ekstrak etanol 96% buah Belimbing wuluh (Averrhoa bilimbi L.) mengandung flavonoid, tanin, dan saponin yang berfungsi sebagai antioksidan dalam mengurangi kerusakan arteri koronaria akibat minyak jelantah. Tujuan: Untuk mengetahui pengaruh pemberian ekstrak belimbing wuluh (Averrhoa bilimbi L.) terhadap gambaran arteri koronaria tikus putih jantan glur Wistar yang diinduksi minyak jelantah. Metode: Penelitian ini berdesain eksperimental laboratorium dengan pola Post Test-Only Control Group Design. Jumlah sampel 25 ekor dibagi menjadi 5 kelompok, yaitu K1 (akuades), K2 (minyak jelantah 1,5 mL), P1, P2, P3 diberikan minyak jelantah dengan dosis 1,5 mL dan ekstrak belimbing wuluh dengan dosis yang berbeda (80 mg, 160 mg, dan 320 mg/200gr BB) selama 28 hari. Hasil: Hasil rerata pengukuran diameter lumen arteri koronaria tikus pada K1=121,27 μm; K2=64,55 μm; P1=81,79 μm; P2=98,34 μm; P3=12,27 μm. Penelitian ini menggunakan uji parametrik One Way ANOVA (p<0,05), dilanjutkan uji Post-hoc LSD (p<0,05). Didapatkan perbedaan yang bermakna pada sebagian besar kelompok, kecuali kelompok P1 dengan P2. Simpulan: Terdapat pengaruh ekstrak buah belimbing wuluh (Averrhoa bilimbi L.) terhadap gambaran perbaikan kerusakan arteri koronaria tikus putih jantan (Rattus novergicus) galur Wistar yang diinduksi minyak jelantah.
