ABSTRAK KUALITAS INTERNAL TELUR AYAM RAS KONSUMSI DAN TELUR AYAM RAS TETAS PADA LAMA SIMPAN YANG BERBEDA Oleh Berly Tenica Prasetia Penelitian ini bertujuan untuk mengetahui pengaruh jenis telur, lama simpan, serta jenis telur dan lama simpan terbaik terhadap penurunan berat telur, haugh unit, indeks albumen, dan indeks yolk telur ayam ras. Penelitian ini dilaksanakan 3--24 Februari 2022 di Laboratorium Produksi dan Reproduksi Ternak, Jurusan Peternakan, Fakultas Pertanian, Universitas Lampung. Penelitian dilakukan dengan Rancangan Acak Lengkap (RAL) pola tersarang dengan jenis telur (telur ayam ras konsumsi dan telur ayam ras tetas) sebagai faktor utama dan lama simpan (0, 7, 14, dan 21 hari) sebagai faktor tersarang, perlakuan diulang sebanyak 3 kali. Setiap ulangan terdiri atas 3 butir telur, sehingga jumlah telur yang digunakan yaitu 72 butir (36 butir telur ayam ras konsumsi dan 36 butir telur ayam ras tetas). Peubah yang diamati meliputi penurunan berat telur, haugh unit, indeks albumen, dan indeks yolk. Data yang diperoleh dianalisis ragam pada taraf 5%, dan dilanjutkan dengan uji BNT. Hasil penelitian menunjukkan bahwa jenis telur tidak berpengaruh nyata (P>0,05) terhadap penurunan berat telur, namun berpengaruh nyata (P<0,05) terhadap haugh unit, indeks albumen, dan indeks yolk. Lama simpan pada telur ayam ras konsumsi dan telur ayam ras tetas berpengaruh nyata (P<0,05) terhadap penurunan berat telur, haugh unit, indeks albumen, dan indeks yolk. Simpulan dalam penelitian ini yaitu telur ayam ras konsumsi dengan lama simpan 0 hari memberikan pengaruh terbaik terhadap haugh unit, indeks albumen, dan indeks yolk, sedangkan lama simpan 7 hari memberikan pengaruh terbaik terhadap penurunan berat telur. Kata kunci : berat telur, haugh unit, indeks albumen, indeks yolk, jenis telur, lama simpan This research aimed to determine the type eggs, storage time, and to find out the best of the type eggs and storage time for the albumen index, yolk index and haugh unit for the consumption egg of layer and hatching egg of layer. This research was conducted from 3 to 24 February 2022 at the Livestock Production and Reproduction Laboratory, Department of Animal Husbandry, Faculty of Agriculture, University of Lampung. This research was conducted using a completely randomized design (CRD) with a nested pattern with type eggs (consumption egg of layer and hatching egg of layer) as the main plot and storage time (0, 7, 14, 21 days) as subplots, the treatment was repeated 3 times. Each repetition consist of 3 eggs, that the number of eggs use are 72 eggs ( 36 eggs of consumption egg of layer and 36 eggs hatching eggs of layer). The observed variables included on the decrease of egg weight, haugh unit, albumen index, and yolk index. The research data were analyzed with analysis of variance at the 5% level and continued with the BNT test. The result of this study indicated the type eggs had not significant effect (P>0,05) on the decrease of egg weight. Meanwhile, a significant effect (P<0,05) on the haugh unit, albumen index, and yolk index. The storage time of consumption egg of layer and hatching egg of layer a significant effect (P<0,05) on the decrease of egg weight, haugh unit, albumen index, and yolk index. It was concluded the consumption egg of layer on the 0 day storage time gave the best effect on the haugh unit, albumen index, and yolk index, meanwhile, the 7 day storage time gave the best effect on the decrease of egg weight.
