Abstrak Bahasa Indonesia Beras analog merupakan salah satu bentuk solusi yang dapat dikembangkan dalam mengatasi permasalahan ketahanan pangan baik dalam hal penggunaan sumber pangan baru ataupun untuk penganekaragaman pangan. Tujuan penelitian ini untuk mengetahui pengaruh penambahan tepung tapioka sebagai bahan pengikat dalam pembuatan beras analog berbahan baku tepung pisang, serta menguji karakteristik beras analog yang meliputi: kadar air, diameter butiran, daya serap air, kerapatan curah, serta daya pengembangan. Pembuatan beras analog dilakukan dengan menggunakan seperangkat mesin pembuat butiran beras analog (granulator). Beras analog dibuat sebanyak 5 variasi komposisi bahan penyusun yaitu 100 % dari tepung pisang dan komposisi campuan tepung pisang dan tepung tapioka dengan perbandingan 95 : 5, 90 : 10, 85 : 15 dan 80 : 20. Beras analog yang dihasilkan memiliki kadar air berkisar antara 10,41% sampai 13,08 %, daya serap air butiran beras analog berkisar antara 36,98 % sampai 64,32 %, kerapatan curah 0,766 gram/cm3 sampai 0,794 gram/cm3, dan daya pengembangan butiran beras analog berkisar antara 5,4 % sampai 14,4 %. Penambahan jumlah tepung campuran menyebabkan pembesaran diameter butiran beras analog. The purposes of this study were to determine the effect of starch as a binder in the manufacture of analog rice and to examine the characteristics of analog rice such as: moisture content, grains diameter, water absorption, bulk density, and expantion ability. Analog rice was performed by using a set of analog rice grain making machine (granulator). Five different compositions of analog rice were made and tested. The formulas are pure bananas flour rice (100 % banana flour) and mixed of banana flour and tapioca flour with ratio of 95 : 5 , 90 : 10 , 85 : 15 and 80 : 20. The results show that the water content of analog rice is between 10.41 % and 13.08 %, water absorption range from 36.98 % to 64.32 %, bulk density of 0.766 g /cm3 to 0.794 g /cm3, and expantion ability range from 5,4% to 14,4%. The addition amount of the flour mixture causes enlargement of the grain diameter. Keywords: analog rice, banana flour, diversification, granulator, tapioca flour.
