Abstract
Modified tempeh extract drink not only has the potential as a probiotic drink but also qualifies as a functional food with added value. This research aims to determine the viability (survival ability) of Saccharomyces cerevisiae in the modified tempeh extract beverage in vivo in the intestines and feces of mice, as well as to understand the effect of administering the modified tempeh extract beverage with Saccharomyces cerevisiae on short-chain fatty acids (SCFA) in the colons of mice. The study used 20 mice (Mus musculus L.) divided into 2 groups. Each group was given a standard AIN 93-M diet composition and maintained for 20 days. Data obtained from observations were analyzed using descriptive tests. The results of this study showed that the live yeast Saccharomyces cerevisiae in the intestines of mice was 7.02 Log CFU/mL and in the feces of mice was 6.83 Log CFU/mL. Administration of the modified tempeh extract beverage with Saccharomyces cerevisiae can increase the levels of propionic acid (SCFA) in mice. Key words: Escherichia coli, probiotic, Saccharomyces cerevisiae, SCFA, tempeh Minuman sari tempe termodifikasi selain berpotensi sebagai minuman probiotik, juga termasuk salah satu pangan fungsional yang bernilai tambah. Penelitian ini bertujuan untuk mengetahui viabilitas (kemampuan hidup) Saccharomyces cerevisiae pada minuman sari tempe termodifikasi Saccharomyces cerevisiae secara in vivo dalam usus dan feses mencit, serta mengetahui pengaruh pemberian minuman sari tempe termodifikasi Saccharomyces cerevisiae terhadap asam lemak rantai pendek (SCFA) pada intestinal kolon mencit. Penelitian ini menggunakan 20 ekor mencit (Mus musculus L.) yang dibagi menjadi 2 kelompok. Setiap kelompok diberi komposisi ransum standar AIN 93-M dan dipelihara selama 20 hari. Data yang diperoleh dari hasil pengamatan dianalisis dengan uji deskriptif. Hasil penelitian menunjukkan bahwa khamir Saccharomyces cerevisiae yang hidup dalam usus mencit sebesar 7,02 Log CFU/mL dan pada feses mencit sebesar 6,83 Log CFU/mL. Pemberian minuman sari tempe termodifikasi Saccaromyces cerevisiae dapat meningkatkan kadar asam propionat (SCFA) pada mencit.
