Abstrak

Tujuan utama dalam penelitian ini adalah untuk mempelajari pengaruh volume pada sistem fermentasi berdasarkan persen konversi kitin menjadi glukosamin. Penelitian ini dilakukan untuk mengonversi kitin yang telah diisolasi dari kulit udang menjadi glukosamin menggunakan proses fermentasi dengan bantuan Actinomycetes ANL-4. Proses fermentasi dilakukan dalam campuran inokulum dan media dengan perbandingan 1:1, dengan volume yang berbeda, yakni 125, 150, 175, dan 200 mL. Hasil penelitian mengindikasikan bahwa volume inokulum dan media fermentasi mempengaruhi persen konversi secara signifikan, dimana semakin besar volume, semakin tinggi pula persen konversinya. Berdasarkan hasil yang diperoleh, dengan menggunakan volume 200 mL dihasilkan persen konversi sebesar 99%, ini menunjukkan bahwa kondisi tersebut merupakan kondisi yang cocok untuk mengonversi kitin menjadi glukosamin. Hasil analisis menggunakan FTIR dan HPLC-ELSD juga menunjukkan bahwa senyawa yang telah diisolasi merupakan glukosamin. (The main objective of the study is to examine the effect of the volume of fermentation system on the percent of conversion of chitin into glucosamine. This study was carried out to investigate conversion of chitin isolated from shrimp.shells into glucosamine using fermentation process with the aid of Actinomycetes ANL-4. Fermentation was carried out in a mixture of inoculums and media with the ratio of 1:1, with different volumes of 125, 150, 175, and 200 mL. The results obtained indicated that the volume of the fermentation system affects the conversion quite significantly, in which the larger the volume, the higher the percent of conversion. It is also found that using the volume of 200 mL resulted in 99% conversion, which reflects that this condition is suitable for complete conversion of chitin into glucosamine. The formation of glucosamine was confirmed by the results of characterizations using FTIR and HPLC-ELSD.)
