Background: Sweet starfruit leaves have potential as natural antioxidants and antibacterial agents. The Ultrasound-Assisted Extraction method is known to have many advantages compared to conventional extraction methods. This study aims to determine the antioxidant and antibacterial activities against Staphylococcus aureus and Escherichia coli of ethanol extract from sweet starfruit leaves (Averrhoa carambola L.). Methods: The research design of this study was a laboratory experiment, testing antioxidant activity using the DPPH method with concentration series of 20, 40, 60, 80, 100 mg/mL, and antibacterial activity against Staphylococcus aureus and Escherichia coli bacteria using the disc diffusion method at a concentration of 2 mg/mL. Results: The results showed that the extract possessed antioxidant activity with an IC₅₀ value of 23.66 µg/mL, as well as ant ibacterial inhibit ion against Staphylococcus aureus with an average inhibition zone of 15.07 – 15.62 mm and against Escherichia coli of 11.90 – 12.83 mm. Conclusion: There is antioxidant and antibacterial activity against Staphylococcus aureus and Escherichia coli bacteria. Latar Belakang: Tanaman Daun Belimbing Manis berpotensi sebagai antioksidan dan antibakteri alami. Metode ekstraksi Ultrasound Assisted Extraction diketahui memiliki banyak kelebihan dibandingkan dengan metode ekstraksi konvensional. Penelitian ini bertujuan untuk mengetahui aktivitas antioksidan dan antibakteri pada bakteri Staphylococcus aureus dan Escherichia coli dengan ekstrak etanol daun belimbing manis (Averrhoa carambola L.) Metode: Desain penelitian pada penelitian ini adalah eksperimental laboratorium dengan menguji uji antioksidan metode DPPH dengan seri konsentrasi 20, 40, 60, 80, 100 mg/mL, dan uji antibakteri pada bakteri Staphylococcus aureus dan Escherichia coli dengan metode difusi cakram pada konsentrasi 2 mg/mL. Hasil: Hasil penelitian menunjukkan ekstrak memiliki aktivitas antioksidan dengan nilai IC₅₀ sebesar 23,66 µg/mL, serta memiliki aktivitas penghambatan bakteri Staphylococcus aureus dengan rata-rata zona hambat 15,07 – 15,62 mm dan Escherichia coli 11,90 – 12,83 mm. Kesimpulan: Terdapat aktivitas antioksidan dan antibakteri pada bakteri Staphylococcus aureus dan Escherichia coli.
