Syarat daging ayam yang aman untuk dikonsumsi menurut SNI 7388 (2009) adalah harus bebas dari cemaran Salmonella sp. Penelitian ini bertujuan untuk mengidentifikasi cemaran Salmonella sp. pada daging ayam di pasar tradisional dan pasar modern di Kota Bandar Lampung. Penelitian ini menggunakan sampel daging ayam yang diambil dari pedagang ayam di 3 pasar tradisional (Pasar Gintung, Pasar Rajabasa dan Pasar Tamin) dan 2 pasar modern (Robinson Super Market dan Chandra Super Market) di Kota Bandar Lampung. Setiap sampel diisolasi pada media selektif Xylose Lysine Desoxycholate (XLD) agar dengan 3 kali ulangan. Hasil penelitian ini menunjukkan cemaran Salmonella sp. teridentifikasi pada daging ayam di pasar tradisional dan pasar modern dengan tingkat cemaran di Pasar Gintung 4,80x108 CFU/g – 2,48 x109 CFU/g, Pasar Rajabasa 3,68x108 CFU/g, - 1,24x109 CFU/g, Pasar Tamin 3,30x108 CFU/g – 3,68x109 CFU/g, Robinson Super Market 3,27x104 CFU/g – 1,50x105 CFU/g dan Chandra Super Market 3,30x104 CFU/g – 1,13x105 CFU/g. Kata kunci: Salmonella sp., cemaran, ayam potong, pasar tradisional, pasar modern ABSTRACT Salmonella sp. is a bacteri that caused of contaminate on broilers and salmonellosis in humans. The requirement of savety chicken meat for comsumtion by SNI 7388 (2009) is must be negative Salmonella sp. The porpuse of this research is to identify of Salmonella sp. contamination on boilers at traditional market and modern market in Bandar Lampung city. This research used a sample such as chicken meat from poulterer at 3 traditional markets (Gintung Market, Rajabasa Market and Tamin Market) and 2 modern markets (Robinson Super Market and Chandra Super Market). All of sample were isolated into selective media Xylose Lysine Desoxycholate (XLD) agar with 3 replication. The result showed that contamination of SalmonellIa sp. were identified on boilers at traditional market and modern market with the level contamination on Gintung Market was 4,80x108 CFU/g – 2,48 x109 CFU/g, Rajabasa Market was 3,68x108 CFU/g, - 1,24x109 CFU/g, Tamin Market was 3,30x108 CFU/g – 3,68x109 CFU/g, Robinson Super Market was 3,27x104 CFU/g – 1,50x105 CFU/g and Chandra Super Market was 3,30x104 CFU/g – 1,13x105 CFU/g.
