Buah pepaya saat pascapanen umumnya memiliki masa simpan yang singkat dan cepat mengalami penurunan mutu akibat adanya proses respirasi, transpirasi, dan produksi etilen yang relatif tinggi. Pengaplikasian pelapis buah KD-112 dan plastic wrapping merupakan salah satu cara untuk meningkatkan masa simpan dan memperlambat penurunan mutu buah dengan menekan proses tersebut. Penelitian ini bertujuan untuk mempelajari perubahan mutu buah pepaya ?California? selama masa simpan sebagai tanggapan dari aplikasi pelapis buah KD-112, plastic wrapping, dan aplikasi kombinasi pelapis buah KD-112 dan dengan plastic wrapping. Penelitian dilaksanakan di Laboratorium Pascapanen Hortikultura, Jurusan Agroteknologi, Fakultas Pertanian, Universitas Lampung. Penelitian dilaksanakan pada Juli hingga Agustus 2015. Penelitian ini menggunakan Rancangan Teracak Sempurna (RTS), dengan enam kombinasi perlakuan, yaitu kombinasi pelapis buah KD-112 (0, 7, dan 14\%) dengan plastic wrapping (tanpa dan dengan satu lapis plastic wrapping). Kombinasi masing-masing perlakuan diulang sebanyak 3 kali, masing-masing terdiri atas lima buah pepaya ?California?, untuk lima kali sampling. Hasil penelitian menunjukkan bahwa (1) aplikasi KD-112 secara nyata dapat memperlambat perubahan mutu buah papaya ?California?, (2) aplikasi plastic wrapping berpengaruh nyata dalam memperlambat perubahan mutu buah papaya ?California?, (3) aplikasi kombinasi KD-112 dan dengan plastic wrapping merupakan perlakuan terbaik dalam memperlambat perubahan mutu buah karena dapat mempertahankan buah papaya ?California? hingga 21 hari simpan. THE EFFECT OF SUGAR ESTER BLEND FRUIT COATING AND PLASTIC WRAPPING ON QUALITY CHANGES OF PAPAYA 'CALIFORNIA' (Carica papaya L.) DURING SHELF LIFE Papaya 'California' is a climacteric fruit and has a thin skin that is fused directly to the flesh. During post-harvest papaya fruit generally has a short shelf-life and its quality deteriorates quickly by the processes of respiration, ethylene production, and relatively high transpiration. Applications of KD-112 fruit coating and plastic wrapping are ways to increase the shelf-life and to slow fruit deterioration by lowering those processes. This research was aimed at studying changes in the quality of papaya 'California' during storage due to the application of fruit coatings of KD-112, plastic wrapping, and applications combination of fruit coatings KD-112 and plastic wrapping. Research was conducted in the Laboratory of Horticultural Postharvest, Department of Agrotechnology, Faculty of Agriculture, University of Lampung. The experiment was conducted on July to August 2015. Treatments were arranged in a completely randomized design with six treatment combinations of fruit coatings KD-112 (0, 7, and 14\%) and the plastic wrapping (without and with one layer plastic wrapping). The combination of each treatment was repeated three times, each consisted of five pieces papaya 'California' with five time samplings. The results of this research showed that (1) the application of KD-112 could significantly slow down the changes in the quality of papaya 'California', (2) the application of plastic wrapping significant slowed down the changes in the quality of papaya fruit 'California', (3) the combination application of KD-112 and plastic wrapping was the best treatment in slowing the changes fruit quality, because those combination treatment could maintain the quality of the papaya fruit 'California' up to 21 days of storage.
