description: Latar Belakang: Minyak jelantah adalah minyak goreng bekas atau minyak yang  dipanaskan berulang kali. Minyak goreng yang dipanaskan akan mengalami empat  proses, yaitu perubahan warna, reaksi oksidasi, polimerisasi dan hidrolisis. Pada  reaksi oksidasi minyak akan menghasilkan produk radikal bebas, sedangkan proses  hidrolisis akan membentuk asam lemak bebas. Konsumsi minyak jelantah dapat  meningkatkan kadar radikal bebas dan asam lemak dalam tubuh. Paparan radikal  bebas pada pembuluh darah dapat menyebabkan disfungsi endotel pembuluh darah  dan asam lemak bebas yang berlebihan dalam darah akan mudah melekat pada  dinding bagian dalam pembuluh darah.  Tujuan: Untuk mengetahui adanya pengaruh pemberian minyak jelantah terhadap  gambaran histopatologi arteri koronaria dinilai dari perubahan diameter lumen arteri  koronaria tikus Sprague dawley jantan.  Metode: Pada penelitian ini, 25 tikus Sprague dawley jantan dibagi dalam 5  kelompok secara acak dan diberi perlakuan selama 4 minggu. K (Kontrol), P1 (diberi  minyak jelantah 1 kali penggorengan 1,5 ml), P2 (diberi minyak jelantah 4 kali  penggorengan 1,5 ml), P3 (diberi minyak jelantah 8 kali penggorengan 1,5 ml), P4  (diberi minyak jelantah 12 kali penggorengan 1,5 ml). Pada akhir penelitian tikus  dilakukan terminasi dan diambil jantungnya untuk pembuatan preparat histologi arteri  koronaria dengan pewarnaan Hematoksilin Eosin.  Hasil: Pada penelitian ini menunjukan perbedaan bermakna (p<0,05) pada semua  kelompok, antara lain kelompok K-P1, K-P2, K-P3, K-P4, P1-P2, P2-P3, P3-P4.  Rerata diameter lumen kelompok K: 147,02±1,85 μm, P1: 134,17±0,85 μm, P2:  126,16±2,01 μm, P3: 117,19±5,57 μm, P4: 98,29±7,58 μm.  Kesimpulan: Terdapat pengaruh pemberian minyak jelantah terhadap gambaran  histopatologi arteri koronaria dinilai dari perubahan diameter lumen arteri koronaria  tikus Sprague dawley jantan.  Kata kunci: Minyak jelantah, diameter lumen arteri koronaria, tikus Sprague dawley  jantan    ASBTRACT    Background: Reused cooking oil is used cooking oil or oil heated repeatedly.  Heated cooking oil will undergo four processes, namely discoloration, oxidation,  polymerization and hydrolysis. In the oxidation reaction of oil will produce free  radicals, while the process of hydrolysis would form free fatty acids. Reused  cooking oil consumption could increase levels of free radicals and fatty acids in  the body. Exposure to free radicals in the blood vessels can cause vascular  endothelial dysfunction and excessive free fatty acids in the blood would be easily  attached to the inner walls of blood vessels.  Objective: This study aims to determine the effect of cooking oil to the coronary  artery histopathology through evaluation of the coronary artery lumen diameter of  Sprague dawley rats.  Method: In this study, 25 Sprague dawley rats were divided randomly into 5  groups and treated for 4 weeks. K (control), P1 (1.5 ml of 1 time used cooking  oil), P2 (1.5 ml of 4 times used cooking oil), P3 (1.5 ml of 8 times used cooking  oil), P4 (1.5 ml of 12 times used cooking oil). At the end of the study the rats  performed termination and the heart had been taken for making coronary artery  histology preparations with Hematoxillin Eosin straining.  Results: The results showed significant differences (p<0.05) in all groups, such as  K-P1, P2-K, K-P3, K-P4, P1-P2, P2-P3, P3-P4. Mean of lumen diameter of group  K: 147.02±1.85 μm, P1: 134.17±0.85 μm, P2: 126.16±2.01 μm, P3: 117.19±5.57  μm, P4: 98.29±7.58 μm.  Conclusion: The conclusion of this study that there is an effect of consuming  reused cooking oil toward the coronary artery histopathology through evaluation  of the coronary artery lumen diameter of Sprague Dawley rats.
