Penelitian ini dilaksanakan pada Juni- Juli 2016 di Kabupaten Pesisir Barat Lampung. Sampel yang digunakan sebanyak 108 ekor, jantan berjumlah 18 ekor dan betina 90 ekor. Variabel penelitian yaitu bobot potong, persentase karkas, persentase kulit, dan persentase lemak kidney pelpic heart serta komposisi karkas yang meliputi persentase lemak, persentase tulang, persentase daging, Imbangan Daging tulang, dan imbangan daging lemak. Data dianalisis menggunakan analisis deskriptif. Bobot potong sapi Krui pejantan 220,28 kg dan sapi betina 180,26 kg, persentase karkas sapi Krui pejantan 48,09% dan sapi betina 44,47%, persentase kulit sapi Krui pejantan 6,47% dan sapi betina 7,02%, persentase lemak kidney pelpic heart sapi Krui pejantan 0,86% dan sapi betina 0,92%, persentse lemak sapi Krui jantan 5,58% dan sapi betina 5,28%, persentase tulang sapi Krui jantan 13,66% dan sapi betina 13,44%, pesentase daging sapi Krui jantan 37,30% dan sapi betina 33,68%, imbangan daging tulang jantan 2,74:1 pada betina 2,52:1, imbangan daging lemak pada sapi Krui jantan 6,70 :1 pada betina 6,40 :1. Kata kunci: Sapi Krui, karakteristik karkas, komposisi karkas. ABSTRACT The purpose of the research is to know characteristic and composition carcass of Krui Cattle on Kabupaten Pesisir Barat lampung. This research was hold on 2016 June-July in Pesisir Barat Lampung regency. The variable of research are characteristic like body weight, carcass percentage, skin percentage, and kidney pelpic heart fat percentage, and composition carcass like fat percentage, bone percentage, meat percentage, meat bone ratio, and meat fat ratio. Data analyzed by descriptive analyzed. The result of research are body weigh on male Krui Cattle is 220,28 kg and female cattle 180,26 kg, carcass percentage on male Krui Cattle is 48,09% and female cattle 44,47%, skin precentage on male Krui Cattle 6,47% and famale cattle 7,02%, percentage of kidney pelvic heart fat on male Krui Cattle is 0.86% and famele 0,92%, fat percentege of male Pesisir Krui Cattle is 5,58% and famale 5,28%, bone precentage of male Krui Cattle is 13,66% and famale 13,44%, maet precentage of male Krui Cattle is 37,30% and famale cattle 33,68%, meat bone ratio from male Krui Cattle is 2,74 :1 on famale 2,52 :1. Meat fat ratio from male Krui Cattle is 6,70 :1 on famale 6,40 :1.
