?url_ver=Z39.88-2004&rft_val_fmt=info%3Aofi%2Ffmt%3Akev%3Amtx%3Adc&rft.title=%0D%0APENGARUH+ASAP+CAIR+KAYU+KARET+REDESTILASI+PADA+PENGASAPAN+IKAN+KEMBUNG+(Rastrelliger+kanagurta)%0D%0A&rft.creator=ASTRI+NURAINI%2C+1314051008&rft.subject=Pertanian+(+Umum+)&rft.subject=Budidaya+.+Perikanan+.+Angling&rft.description=Ikan+kembung+(Rastrelliger+kanagurta)+mudah+mengalami+kerusakan+akibat+aktivitas+mikroorganisme+dan+perubahan+kimiawi+dalam+tubuh+ikan.+Teknik+pengasapan+merupakan+salah+satu+teknik+pengawetan+pada+ikan+tetapi+teknik+pengasapan+konvensional+memiliki+beberapa+kelemahan%2C+yaitu+terakumulasinya+senyawa+berbahaya+seperti+tar+dan+benzopiren+pada+produk%2C+menyebabkan+pencemaran+udara%2C+serta+efisiensi+pengasapan+sulit+dikontrol.+Pengasapan+menggunakan+asap+cair+digunakan+untuk+mengatasi+kelemahan+dari+teknik+pengasapan+konvensioanal.+Potensi+bahan+baku+untuk+asap+cair+yang+ada+di+Provinsi+Lampung+adalah+kayu+karet.+Penelitian+ini+bertujuan+untuk+mendapatkan+konsentrasi+asap+cair+kayu+karet+redestilasi+dan+lama+perendaman+ikan+terbaik+pada+pengasapan+ikan+kembung.+Penelitian+disusun+dalam+Rancangan+Acak+Kelompok+Lengkap+(RAKL)+dengan+dua+faktor+dan+tiga+kali+ulangan.Faktor+pertama+adalah+konsentrasi+asap+cair+kayu+karet+redestilasi%2C+yaitu+K1+(10%25+(v%2Fv))%2C+K2+(15%25+(v%2Fv))%2C+dan+K3+(20%25+(v%2Fv)).+Faktor+kedua+adalah+lama+perendaman%2C+yaitu+L1+(10+menit)%2C+L2+(15+menit)%2C+dan+L3+(20+menit).+Data+yang+diperoleh+diuji+kesamaan+ragamnya+dengan+uji+Bartlett+dan+keaditifitasan+dengan+uji+Tuckey.+Analisis+sidik+ragam+digunakan+untuk+mengetahui+ada+tidaknya+pengaruh+perlakuan%2C+kemudian+dilakukan+uji+lanjut+menggunakan+uji+Duncan+Multiple+Range+Test+pada+taraf+5%25.+Hasil+pengujian+asap+cair+kayu+karet+menunjukkan+asap+cair+grade+3+didominasi+oleh+senyawa+golongan+fenol+sedangkan+asap+cair+grade+2+didominasi+oleh+senyawa+golongan+asam+organik.+Hasil+pengamatan+pada+ikan+kembung+asap+menunjukkan+semakin+tinggi+konsentrasi+asap+cair+dan+semakin+lama+perendaman+maka+total+mikroba+ikan+kembung+asap+semakin+menurun.+Perlakuan+terbaik+berdasarkan+rekapitulasi+data+penelitian+adalah+faktor+konsentrasi+asap+cair+K1+(10%25+v%2Fv))+dan+faktor+lama+perendaman+L2+(15+menit)+yang+memberikan+nilai+terbaik+terhadap+nilai+angka+lempeng+total+(4.4%C3%97103+CFU%2Fg+pada+hari+ke-0+dan+4.7%C3%97104+CFU%2Fg+pada+hari+ke-6)%2C+kadar+air+(di+bawah+60%25)%2C+dan+sifat+organoleptik+(skor+aroma+4.483+(netral)%3B+tekstur+4.067+(netral)%3B+warna+4.661+(netral)%3B+penampakan+4.632+(netral)%3B+dan+penerimaan+keseluruhan+4.506+(netral))%0D%0A%0D%0A%0D%0AKata+kunci+%3A+Asap+cair%2C+ikan+kembung%2C+kayu+karet%2C+pengasapan%2C+redestilasi%0D%0A%0D%0ALong+jawed+mackerel+(Rastrelliger+kanagurta)+is+easily+decayed+by+microorganism+activity+and+chemical+changes+in+the+fish+body.+Smoking+technique+is+one+of+the+preservation+techniques+in+fish+but+the+conventional+smoking+technique+has+several+disadvantages%2C+namely+the+accumulation+of+harmful+compounds+such+as+tar+and+benzopiren+in+the+product%2C+causing+air+pollution%2C+and+the+efficiency+of+curing+is+difficult+to+control.+Smoking+using+liquid+smoke+is+used+to+overcome+the+weaknesses+of+conventional+smoking+technique.+The+potential+of+raw+material+for+liquid+smoke+in+Lampung+Province+is+rubber+wood.+The+aim+of+this+study+was+to+get+the+best+concentration+of+redestillated+rubber+wood+liquid+smoke+and+soaking+time+in+long+jawed+mackerel+smoking+process.+This+study+was+arranged+in+complete+randomized+block+design+(CBRD)+with+two+factors+and+three+replications.+The+first+factor+was+the+concentration+of+redestilated+rubber+wood+liquid+smoke%2C+K1(10%25(v%2Fv))%2C+K2(15%25(v%2Fv))%2C+and+K3(20%25(v%2Fv)).+The+second+factor+was+soaking+time%2C+L1(10+minutes)%2C+L2(15+minutes)%2C+and+L3(20+minutes).+The+homogenity+of+data+was+analyzed+by+Bartlett+test+and+additifity+of+data+was+tested+by+Tuckey+test.+ANOVA+was+used+to+know+the+effect+of+treatments.+Data+then+were+further+analyzed+by+using+Duncan+Multiple+Range+Test+at+5%25+rate+level.+The+result+of+GC-MS+showed+that+3rd+grade+of+rubber+wood+liquid+smoke+was+dominated+by+phenol+group+compound+while+2nd+grade+of+rubber+wood+liquid+smoke+was+dominated+by+organic+acid+group+compound.+The+best+result+of+this+study+was+the+concentration+of+liquid+smoke+K1+(10%25v%2Fv)+and+soaking+time+L2+(15+minutes)+which+gave+the+best+values+of+total+plate+count+(4.4%C3%97103+CFU%2Fg+on+day+0+and+4.7%C3%97104+CFU%2Fg+on+day+3)%2C+moisture+content+(below+60%25)%2C+and+organoleptic+properties+(aroma+4%2C483+(neutral)%2C+texture+4%2C067+(neutral)%2C+color+4%2C661+(neutral)%2C+sighting+4%2C632+(neutral)%2C+and+overall+acceptance+4%2C506+(neutral))%0D%0A%0D%0A%0D%0AKeywords%3A+Liquid+smoke%2C+long+jawed+mackerel+fish%2C+redestillation%2C+rubber+wood%2C+%0D%0A+++++++smoking+process%0D%0A%0D%0A&rft.publisher=FAKULTAS+PERTANIAN&rft.date=2017-05-23&rft.type=Skripsi&rft.type=NonPeerReviewed&rft.format=text&rft.identifier=http%3A%2F%2Fdigilib.unila.ac.id%2F27247%2F1%2FAB
