"‘Cavendish’ banana is one of climacteric fruits which is easily damaged during\r\nstorage. It is because of its high respiration, etilen production and transpiration\r\nrates. One of the ways to increase the shelf- life and maintain the quality of\r\nbanana ‘Cavendish’ is by using 1-methylcyclopropene (1-MCP) and chitosan\r\naplications that can hamper respiration, etilen production, and transpiration in the\r\nfruit.\r\nThe aims of this research were to (1) study the efect of 1-MCP aplication to\r\nincrease shelf- life and maintain the quality of banana ‘Cavendish’, and (2) study\r\nthe effect of aplications combination of 1-MCP and chitosan to increase shelf-\r\nlife and maintain the quality of ‘Cavendish’ banana fruits. The research was\r\nconducted in the Horticultural Postharvest Laboratory, Faculty of Agriculture,\r\nLampung University during September- Oktober 2013.Ferdaner Humairah Fazri\r\nii\r\nTreatments were arranged in a completely randomized design, at 2x2 factorial .\r\nThe first factor was control (no treatment with 1-MCP; M0) and treatmen with 1-\r\nMCP (M1). The second factor was control (no treatment with chitosan 2,5%; K0)\r\nand chitosan 2,5% (K1). Observation were conducted on the stage changes, fruit\r\nweight, fruit firmness, total soluble solid (0Brix), and free acid content.\r\nResult showed that (1) 1-MCP application significantly inhibited ripening and\r\ndeterioration of 'Cavendish' banana fruits than control by slowing the stage\r\nchanges, fruit weight loss, fruit firmness, 0 Brix, and acid content, (2) application\r\nof chitosan to 1-MCP treated fruits profoundly slowed ripening and quality\r\ndecrease of 'Cavendish' banana fruits, but caused an imperfect fruit color\r\ndevelopment.\r\nKey words: banana, 1-MCP, chitosan, storage life, quality\r\n\r\nBuah pisang ‘Cavendish’ tergolong buah klimakterik yang mudah mengalami\r\nkerusakan pada saat penyimpanan. Hal tersebut disebabkan oleh adanya proses\r\nrespirasi, prosuksi etilen dan transpirasi yang tinggi pada buah pisang. Salah satu\r\ncara untuk dapat meningkatkan masa simpan dan mempertahnkan mutu buah\r\npisang ‘Cavendish’ dapat dilakukan dengan menggunakan 1-methylcyclopropene\r\n(1-MCP) dan pelapis kitosan yang dapat menghambat peningkatan laju respirasi,\r\nproduksi etilen, dan traspirasi yang terjadi didalam buah, sehingga masa simpan\r\ndan mutu buah pisang ‘Cavendis’ dapat dipertahankan.\r\nPenelitian ini bertujuan untuk (1) mengetahui pengaruh aplikasi 1-MCP terhadap\r\nmasa simpan dan mutu buah pisang ‘Cavendish’, dan (2) mengetahui pengaruh\r\nkombinasi aplikasi 1-MCP dan pelapis kitosan terhadap masa simpan dan mutu\r\nbuah pisang ‘Cavendish’. Penelitian dilaksanakan di Laboratorium Pascapanen\r\nHortikultura, Fakultas Pertanian, Universitas Lampung.
