Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 5 perlakuan dan 3 ulangan. Perlakuan pada penelitian ini yaitu yoghurt susu sapi tanpa penambahan sari buah belimbing (Averrhoa carambola L) (P0), penambahan sari buah belimbing (Averrhoa carambola L) 2\% (P1), 4\% (P2), 6\% (P3), dan 8\% (P4). Data yang diperoleh dianalisis menggunakan analisis ragam (ANARA) dengan taraf nyata 5\% dan dilanjutkan dengan uji Beda Nyata Terkecil (BNT). Hasil penelitian menunjukkan bahwa level penambahan sari buah belimbing manis (Averrhoa carambola L) tidak berpengaruh nyata (P{\ensuremath{>}}0,05) terhadap kadar lemak dan kadar air pada yoghurt susu sapi, tetapi berpengaruh nyata (P{\ensuremath{<}}0,05) terhadap kadar vitamin C pada yoghurt susu sapi. Kata kunci: Belimbing Manis, Kadar Air, Kadar Lemak, Kadar Vitamin C, Yoghurt, ABSTRACT CHEMICAL QUALITY OF COW?S MILK YOUGHURT WITH THE ADDITION OF STARFRUIT JUICE (Averrhoa carambola L) By Nur Aini Agustin The aim of this research is to determine the effect of adding sweet star fruit juice (Averrhoa carambola L) on the chemical quality of cow's milk yoghurt which includes fat content, water content and vitamin C content and to find out the best percentage of adding sweet star fruit juice (Averrhoa carambola L) on the chemical quality of cow's milk yoghurt which includes fat content, water content and vitamin C content. This research was carried out on Desember 11?20, 2023 at Animal Production Laboratory, Animal Husbandry Department, Faculty of Agriculture, University of Lampung and Agricultural Products Technology Laboratory, Lampung State Polytechnic. This study used a Complete Randomized Design (RAL) with 5 treatments and 4 repeats. The treatment in this study were cow's milk yoghurt without the addition of star fruit juice (Averrhoa carambola L) (P0), the addition of star fruit juice (Averrhoa carambola L) 2\% (P1), 4\% (P2), 6\% (P3), and 8\% (P4). The data obtained were analyzed using analysis of variance (ANARA) with a significance level of 5\% and continued with the Least Significant Difference (LSD) test. The results showed that the level of addition of sweet star fruit juice (Averrhoa carambola L) had no significant effect (P{\ensuremath{>}}0.05) on the fat content and water content of cow's milk yoghurt, but had a significant effect (P{\ensuremath{<}}0.05) on Vitamin C levels in cow's milk yoghurt.
