"Old palm trunks have a lot of water and various chemical content such as short-\r\nchain carbohydrates that have potential as a source of sugar production. The sugar\r\n\r\ncontent of old oil palm trunk sap can be influenced by the holding time of the palm\r\ntrunk before extraction. The holding time of old palm trunks before extraction will\r\nincrease the sugar content in palm sap water. This study aims to determine the\r\ncharacteristics of liquid sugar obtained from old oil palm trunks with delayed\r\nextraction time treatment. The experiment was a non-factorial and arranged in a\r\ncomplete randomized block design. The treatment was 5 levels of delay time of oil\r\npalm trunks before extraction : 1, 2, 3, 4, and 5 weeks. Some data were tested for\r\nhomogeneity and additivity using the Bartlett and Tuckey tests, then the data were\r\nsubjected to analysis of variance (ANOVA), and continued with the Least\r\nSignificant Difference (LSD) test and some data were presented descriptively in the\r\nform of tables and graphs (Microsoft Excel Data Analysis). The results showed that\r\nthe best liquid sugar with the treatment of delaying old palm trunks for 4 weeks with\r\n2.5 liters of initial juice produced a yield of 24% with a cooking time of 135 minutes,\r\npH 5.5, total soluble solids 72°brix, moisture content 38%, ash content 3.17%, total\r\nsugar 87.82 g/100g, total phenols 872.78 mg/100g, total flavonoids 28.42\r\nmg/100mg, . The best treatment has a sugar profile that shows glucose, fructose\r\nand sucrose levels are 21.31%, 12.57% and 8.66% respectively, IC50 DPPH value\r\nof 136.36 μg/mL and ABTS of 19.44 IC50 DPPH value of 136.36 μg/mL,\r\nHydroxymethylfulfural (HMF) and heavy metal were not detected. Kandungan gula dari nira batang kelapa sawit tua dapat dipengaruhi oleh\r\nwaktu tunda batang sawit sebelum ekstraksi. Penundaan batang kelapa sawit tua\r\nsebelum ekstraksi akan meningkatkan kadar gula pada air nira kelapa sawit.\r\nPenelitian ini bertujuan untuk mengetahui karakteristik gula cair yang diperoleh\r\ndari batang kelapa sawit tua dengan perlakuan penundaan waktu ektraksi. Penelitian\r\nini disusun dalam rancangan acak kelompok lengkap non factorial dengan\r\nperlakuan waktu tunggu batang kelapa sawit sebelum ekstraksi pada minggu ke 1,\r\n2, 3, 4, dan 5. Beberapa data pengamatan diuji homogenitas dan aditifitasnya\r\ndengan menggunakan uji Bartlett dan uji Tuckey, kemudian data diuji dengan\r\nanalisis varian (ANOVA), dan dilanjutkan dengan uji Beda Nyata Terkecil (BNT)\r\nserta beberapa data disajikan secara deskriptif dalam bentuk tabel dan grafik\r\n(Microsoft Excel Data Analysis). Hasil penelitian menunjukkan bahwa gula cair\r\nterbaik dengan perlakuan penundaan batang kelapa sawit tua selama 4 minggu\r\ndengan nira awal 2,5 liter menghasilkan rendemen sebanyak 24% dengan waktu\r\npemasakan 135 menit, pH 5,5, total padatan terlarut 72°brix, kadar air 38%, kadar\r\nabu 3,17%, total gula 87,82 g/100g, total fenol 872,78 mg/100g, total flavonoid\r\n28,42 mg/100mg, . Perlakuan terbaik memiliki profil gula yang menunjukkan kadar\r\nglukosa, fruktosa dan sukrosa secara berturut-turut adalah 21,31%, 12,57% dan\r\n8,66% , nilai IC50 DPPH sebesar 136,36 μg/mL dan ABTS sebesar 19,44 nilai IC50\r\nDPPH sebesar 136,36 μg/mL, pengujian Hidroksimetilfulfural (HMF) dan logam\r\nberat menunjukkan hasil tidak terdeteksi, serta pengujian respon glikemik yang\r\nmenunjukkan nilai IG 49,6 yang termasuk kedalam kategori rendah.\r\nKata kunci : batang kelapa sawit tua, gula cair, penundaan batang"^^ .
