Actinomycetes ANL-4 menghasilkan enzim kitinase dan enzim kitin deasetilase. Produksi glukosamin dilakukan secara fermentasi dengan sistem tertutup (Batch). Waktu fermentasi dilakukan untuk 1, 2, 3, 4, dan 5 hari. Produk berupa glukosamin diperoleh paling tinggi pada hari pertama sebesar 72%. Produk glukosamin direaksikan dengan ninhidrin dan dianalisis menggunakan spektofotometri UV-Vis. Hasil analisis menunjukkan kadar kemurnian glukosamin paling tinggi didapat pada hari pertama yaitu sebesar 0,0638 %.

ABSTRACT
This research was conducted to convert enzyme of chitin to glucosamine from shrimp shell by using Actinomycetes ANL-4. Actinomycetes ANL-4 produces chitinase and deasetilase enzymes. The production of glucosamine for that process was performed by fermentation with batch system. The fermentation period was carried out for 1, 2, 3, 4 and 5 days. The highest result of glucosamine production was acquired in first day, about 72%. Then, the product was mixed with ninhidrin and analyzed by using UV-Vis spectrofhotometry. The analysis’s result showed that the highest purity of glucosamine was acquired at the first day it.e. 0,0638%.
