PANGAN GULA MERAH (Kandungan Boraks) DI PASAR KOTA
BANDAR LAMPUNGGula merah merupakan produk olahan nira kelapa/aren yang dilakukan oleh
pengrajin gula merah. Gula merah semakin diminati karena berbagai kelebihan
yang dimilikinya. Namun dalam proses pengolahanya ada peluang ditambahkan
bahan-bahan lain yang berlebihan atau membahayakan kesehatan demi
keuntungan sepihak. Tujuan dari penelitian ini adalah mengetahui mutu dan
keamanan gula merah yang beredar di pasar Kota Bandar Lampung. Lokasi
sampling gula merah ditentukan mengacu pada ISO 8243-1991 yaitu 10 pasar dari
13 pasar yang ada di Bandar Lampung yang dipilih secara purposive sampling.
Setiap pasar diambil sampel sebanyak akar N (N = jumlah pedagang gula merah
di pasar terkait) dan masing-masing titik sampling diambil sampel gula merah
sebanyak 0,5 kg. Sampel gula merah kemudian dianalisis mutu (kadar abu dan
padatan tidak larut) serta analisis boraks secara kualitatif. Hasil penelitian
menunjukan bahwa mutu gula merah di pasar Kota Bandar Lampung dilihat dari
kadar abu dan padatan tidak larut masih belum baik. Sebanyak 63% dari sampel
yang dianalisis telah memenuhi persyaratan mutu gula merah (SNI 01-3743-1995)
yaitu kadar abu maksimal 2% dan hanya 5% sampel yang memenuhi persyaratan
padatan tidak larut maksimal 1%. Hasil analisis boraks secara kualitatif
menunjukkan seluruh sampel gula merah tidak mengandung boraks atau gula
merah yang beredar di pasar-pasar Kota Bandar Lampung aman dari boraks.

ABSTRACT
Brown sugar is sugar product from coconut sap or sugar palm sap produced by
brown sugar farmer. Brown sugar is increasingly demanded because it has some
superiorities. However, brown sugar processing opens opportunities to add some
excessive substances for more profit which may harm health. The objective of
this research was to find out the quality and safety of brown sugar distributed in
traditional markets in Bandar Lampung. The sampling location of brown sugar
was determined by referring to ISO 8243-1991; there were 10 traditional markets
selected purposively from 13 traditional markets in Bandar Lampung. Samples
were taken from each traditional market of square N (N = sum of brown sugar
vendors in the selected market) and 0.5 kg brown sugar sample was taken from
each of sampling location. The samples were analyzed for their qualities (ash
content and total suspended solid) and analyzed for their borax content
qualitatively. The research result showed that the brown sugar quality in Bandar
Lampung traditional markets seen from ash content and total suspended solid was
poor. Samples analyzed of 63% have met the quality requirement of 2%
maximum ash content for brown sugar (SNI 01-3743-1995). Only 5% of the
samples satisfied 1% total suspended solid have met requirement. Qualitative
analysis result of borax content showed that all of samples taken from traditional
markets did not contain borax.
