Abstrak

Abstrak enelitian ini bertujuan untuk menganalisis mekanisme rantai pasok, menganalisis pengendalian persediaan bahan baku, menyusun strategi peningkatan kinerja, dan menganalisis nilai tambah pada agroindustri tahu tempe. Penelitian dilakukan di Kelurahan Gunung Sulah Kecamatan Sukarame Bandar Lampung pada bulan Januari-Maret 2011. Metode yang digunakan adalah metode survei. Jumlah responden sebanyak 15 pengrajin tahu dan 15 pengrajin tempe, serta 5 responden dari pakar atau instansi terkait agroindustri. Analisis yang digunakan yaitu metode Economic Order Quantity (EOQ ), analisis SWOT, metode Analitycal Hierarchi Process (AHP), dan analisis nilai tambah model Hayami. Hasil penelitian menunjukkan bahwa rantai pasok pada agroindustri keripik pisang terdiri pemasok kedelai, pedagang pengumpul, pengrajin tahu tempe, pedagang pengecer tahu tempe, dan konsumen. Pembelian bahan baku yang ekonomis secara rata-rata sebesar 68 kilogram, dengan frekuensi pemesanan sebanyak 21 kali per bulannya. Untuk meningkatkan kinerja agroindustri perlu memfokuskan pada pemasaran dan penjualan, dimana peran instansi terkait sangat dibutuhkan, tujuan yang harus diperhatikan adalah peningkatan mutu produk, kemudian dapat dipilih altematif yang mendukung tujuan yaitu meningkatkan kualitas tahu tempe agar tidak terpengaruh pesaing sejenis yang memberikan harga lebih murah. Nilai tambah rata-rata tahu sebesar Rp. 4.812,90 per kilogram kedelai dengan rasio nilai tambah sebesar 41,29%, nilai tambah rata-rata tempe sebesar Rp. 3.017,63 per kilogram kedelai dengan rasio nilai tambah sebesar 30,44%. Kata Kunci : Rantai Pasok, Pengendalian Bahan Baku, Peningkatan Kinerja, dan Nilai Tambah Abstract The aimed of this research was to analyze the formulation of supply chain, analyze the basic commodity inventory control, performance enhanced strategy, and analyze value added in tofu and tempe agro industry. Research was done in Gunung Sulah village at Sukarame district in Bandar Lampung from Januari until Maret 2011. Method used was survey method. Respondent were15 workers tofu and 15 workers tempe, with 5 respondents were expert or related to resort of agroindustry. Analyses were Economic Order Quantity (EOQ) method, SWOT analysis, Analytical Hierarchy Process (AHP) method, and analysis of model value added of Hayami. Research result showed that supply chain in tofu and tempe agroindustry consists of soybean supplier, collectors’ tradesman, worker of tofu and tempe, dealer of tofu and tempe, and consumer. Buying commodity economically were 68 kilograms, with order frequency as long as 21 times per month. To increase performance of agroindustry needed focus on marketing and sale, where does related resort character wanted so much, aim that must be payed product quality enhanced, then eligible alternative that support aim that was increase quality of tofu and tempe so that not influenced competitor of a kind that give cheaper price. Average value added were Rp. 4.812,90 per soy bean kilogram with added value ratio as big as 41,29%, average value added tempe were Rp. 3.017,63 per kilogram of soy bean with added value ratio as big as 30,44%.
