Abstrak Bahasa Indonesia Kopigmentasi telah dilaporkan sebagai salah satu mekanisme utama dalam menstabilkan warna antosianin. Tujuan dari penelitian ini adalah menentukan jenis dan rasio molar kopigmen (katekol atau tanin) terhadap antosianin terbaik yang paling menstabilkan warna antosianin ekstrak kulit terung Belanda (Cyphomandra betacea Sendtn) selama 40 hari penyimpanan. Stabilitas antosianin dievaluasi melalui pengamatan perubahan konsentrasi antosianin dan retensi warna selama periode penyimpanan serta kinetika reaksi. Kadar antosianin awal dari ekstrak kulit terung Belanda (Cyphomandra betacea Sendtn) adalah 0,31 mMol/L (0,20 mg/100g). Kopigmentasi dengan katekol kurang efektif menstabilkan warna antosianin, ditunjukkan oleh konsentrasi antosianin pada rasio molar 0:1, 50:1 dan 100:1 tidak berbeda nyata, retensi warna pada pH 3,5 sebesar 44,35% dan kinetika reaksi pada suhu 65oC (k) 0,141 dan t½ 4,91 jam. Kopigmentasi dengan tanin pada rasio molar 100:1 lebih efektif menstabilkan warna antosianin yang ditunjukkan konsentrasi antosianin 0,10 mMol/L setelah penyimpanan 40 hari, retensi warna pada pH 3,5 63,56% dan kinetika reaksi pada suhu 65oC (k) 0,063 dan t½ 11,00 jam. The objectives of this research were to determine type and molar ratio of copigment (catechol or tannin) to anthocyanin which most stabilize the color of anthocyanin from epicarp extract of Terung Belanda (Cyphomandra betacea Sendtn) during 40 days storage. Stability of anthocyanin was evaluated from changes of anthocyanin concentration and color retention during storage period and kinetic parameters. The initial anthocyanin content from epicarp extract of Terung Belanda (Cyphomandra betacea Sendtn) was 0,31 mMol/L (0,20 mg/100g). Copigmentation with catechol less effective to stabilize of color of anthocyanin, indicated by concentration of anthocyanins at molar ratio 0:1, 50:1 and 100:1 which were not significantly different, color retention at pH 3,5 similarly of 44,35% and kinetics parameter at 65oC (k) 0,141 and t½ 4,91 hours.
