Abstrak Penelitian ini bertujuan untuk : (1) Menganalisis nilai tambah pada klaster agroindustri tahu dan tempe di Kecamatan Metro Barat. (2) Menganalisis pendapatan agroindustri tahu dan tempe di Kecamatan Metro Barat. (3) Menganalisis harga pokok produksi pada agroindustri tahu dan tempe di Kecamatan Metro Barat. Pemilihan lokasi dilakukan secara sengaja, dengan penentuan responden menggunakan metode sensus. Data primer diperoleh dari kuisioner dan wawancara langsung kepada pengrajin. Data sekunder diperoleh dari berbagai literatur, media cetak dan beberapa instansi seperti BPS dan Dinas Perindustrian dan Perdagangan. Penelitian dilaksanakan pada Bulan Juli hingga Agustus 2010. Analisis yang dilakukan meliputi metode nilai tambah Hayami, dengan kriteria analisis : jika NT > 0, maka produk memberikan nilai tambah dan jika NT ≤ 0, maka produk tidak memberikan nilai tambah. Tujuan ke dua dan ke tiga penelitian dijawab dengan menggunakan perhitungan pendapatan dan harga pokok produksi. Hasil penelitian menunjukkan bahwa : (1) Nilai tambah yang diperoleh dari pengolahan per kilogram kedelai menjadi tempe adalah Rp 3.976,34 atau sebesar 35,41 persen dari nilai produk dan Rp 35,46 per kilogram kedelai menjadi tahu atau sebesar 35,46 persen dari nilai produk. (2) Pendapatan yang diterima oleh agroindustri tempe perbulan adalah sebesar Rp 1.807.478,44 dan Rp 3.774.558,46 untuk agroindustri tahu per bulan. Nilai rasio imbangan penerimaan dan biaya (R/C) pada agroindustri tempe adalah sebesar 1,24 dan nilai rasio imbangan penerimaan dan biaya pada agroindustri tahu adalah sebesar 1,22. (3) Harga pokok produksi tempe yang dihasilkan oleh agroindustri ini adalah Rp 4.502,83 dan Rp 8.039,63 untuk harga pokok produksi tahu. Abstract The research were aimed to: (1) Analyze the value added of tofu and tempe agroindustries cluster in West Metro District. (2) Analyze the revenue of tofu and tempe agroindustries in West Metro District. (3) Analyze the cost production or tafu and tempe agroindustries in West Metro District. Location was choosen by purposive sampling and the method used was census. Primary data were collected by interviewing the respondents of tofu and tempe entrepreneurs. Secondary data were obtained from various literatures, printed media and some agencies such as the Central Bureau Statistic and The Industry and Trade Service. The data was collected in July to August 2010. Value added of tofu and tempe were using Hayami method with criteria of analysis: if NT> 0 means the product has value added, and if NT ≤ 0 means the product does not provide added value. The second and third objections study answered by calculation of income and production costs. The results showed that: (1) Value added of tempe is 3,976.34 rupiahs or 35,41 percent of product value, and 4.552,81 rupiahs of tofu or 35,46 percent of product value. (2) The revenues of tempe and tofu agroindustries were 1,807,478.44 rupiahs and 3.774.558,45 rupiahs per month. Ratio of revenue and expenditure (R/C) in tempe agroindustry is 1.24 and ratio of revenue and cost in tofu agroindustry is 1.22.
