Abstrak

Penelitian ini bertujuan untuk membedakan jenis kopi spesialti (kopi Gayo, Kintamani, dan Wamena) berdasarkan sifat optik menggunakan UV-Vis Spectroscopy. Penelitian ini telah dilaksanakan pada bulan Mei sampai Juni 2017. Komposisi bahan yang digunakan pada setiap sampel dalam penelitian ini yaitu 1 gram dengan jumlah sampel sebanyak 50 sampel untuk setiap jenis kopi Gayo, Kintamani, dan Wamena. Setiap sampel diambil data spektra sebanyak 2 kali. Setelah didapatkan data absorban, langkah selanjutnya yaitu menggabungkan data absorban dari sampel kopi Gayo, Kintamani, dan Wamena ke dalam Microsoft Excel yang kemudian akan diolah menggunakan software The Unscrambler versi 9.2. Data absorban dari 300 sampel diolah menggunakan metode Principal Component Analysis (PCA) untuk mendapatkan nilai faktor dari Principal Component (PC). Setelah itu, model kalibrasi dan validasi dibangun menggunakan metode PLS-DA. Selanjutnya dilakukan evaluasi model menggunakan beberapa parameter seperti R2, RMSEC, RMSECV, dan RMSEP. Hasil dari kalibrasi dan validasi menunjukkan bahwa sampel yang berhasil dibedakan dengan menggunakan UV-Vis Spectroscopy yaitu sampel Gayo-Kintamani dengan nilai R2Cal sebesar 0,94 dan R2Val sebesar 0,85, sampel Gayo-Wamena dengan nilai R2Cal sebesar 0,14 dan R2Val sebesar 0,11, sampel Kintamani-Wamena dengan nilai R2Cal sebesar 0,95 dan R2Val sebesar 0,93, dan sampel Gayo-Kintamani-Wamena dengan nilai R2Cal sebesar 0,11 dan R2Val sebesar 0,09. Sedangkan untuk sampel Gayo-Kintamani dengan nilai R2Pred sebesar 0,92, Gayo-Wamena dengan nilai R2Pred sebesar 0,17, Kintamani-Wamena dengan nilai R2Pred sebesar 0,94, dan Gayo-Kintamani-Wamena dengan nilai R2Pred sebesar 0,13 dapat dikatakan tidak berhasil dibedakan karena kopi Gayo dan Wamena memiliki jenis tanah yang sama yaitu ultisol. Kata Kunci : kopi, UV-Vis Spectroscopy, Principal Component Analysis (PCA), Partial Least Square Discriminant Analysis (PLS-DA) abstract The aim of the research was to distinguish the types of specialty coffee (Gayo coffee, Kintamani coffee, and Wamena coffee) based on optical properties using UV-Vis Spectroscopy. The research was conducted from May to June 2017. The composition of the material used in each sample in this research was 1 gram with 50 samples in total for Gayo, Kintamani, and Wamena. Spectral data for each sample were acquired twice. After obtaining absorbance data, the next step was to combaine absorbance data from Gayo, Kintamani, and Wamena coffee samples into Microsoft Excel which will be analyzed by using The Unscrambler version 9.2 software. The total 300 absorbance data were processed using Principal Component Analysis (PCA) method to obtain factor values from Principal Component (PC). Then, the calibration and validation model were developed using Partial Least Square Discriminant Analysis (PLS-DA) method. The model was evaluated using several parameters such as R2, RMSEC, RMSECV, and RMSEP. The result of calibration and validation showed that the samples were successfully differentiated using UV-Vis Spectroscopy which Gayo-Kintamani has R2Cal value of 0,94 and R2Val value of 0,85, Gayo-Wamena has R2Cal value of 0,14 and R2Val value of 0,11, Kintamani-Wamena has R2Cal value of 0,95 and R2Val value of 0,93, and Gayo-Kintamani-Wamena has R2Cal value of 0,11 and R2Val value of 0,09. The prediction that was resulted from Gayo-Kintamani with R2Pred value of 0,92, Gayo-Wamena with R2Pred value of 0,17, Kintamani-Wamena with R2Pred value of 0,94, and Gayo-Kintamani-Wamena with R2Pred value of 0,13. Meanwhile, the samples of Gayo-Wamena and Gayo-Kintamani-Wamena can not be distinguished because Gayo and Wamena coffees have the same type of soil that is ultisol.
