Abstract
‘Cavendish’ banana is one of climacteric fruits which is easily damaged during storage. It is because of its high respiration, etilen production and transpiration rates. One of the ways to increase the shelf- life and maintain the quality of banana ‘Cavendish’ is by using 1-methylcyclopropene (1-MCP) and chitosan aplications that can hamper respiration, etilen production, and transpiration in the fruit. The aims of this research were to (1) study the efect of 1-MCP aplication to increase shelf- life and maintain the quality of banana ‘Cavendish’, and (2) study the effect of aplications combination of 1-MCP and chitosan to increase shelf- life and maintain the quality of ‘Cavendish’ banana fruits. The research was conducted in the Horticultural Postharvest Laboratory, Faculty of Agriculture, Lampung University during September- Oktober 2013.Ferdaner Humairah Fazri ii Treatments were arranged in a completely randomized design, at 2x2 factorial . The first factor was control (no treatment with 1-MCP; M0) and treatmen with 1- MCP (M1). The second factor was control (no treatment with chitosan 2,5%; K0) and chitosan 2,5% (K1). Observation were conducted on the stage changes, fruit weight, fruit firmness, total soluble solid (0Brix), and free acid content. Result showed that (1) 1-MCP application significantly inhibited ripening and deterioration of 'Cavendish' banana fruits than control by slowing the stage changes, fruit weight loss, fruit firmness, 0 Brix, and acid content, (2) application of chitosan to 1-MCP treated fruits profoundly slowed ripening and quality decrease of 'Cavendish' banana fruits, but caused an imperfect fruit color development. Key words: banana, 1-MCP, chitosan, storage life, quality Buah pisang ‘Cavendish’ tergolong buah klimakterik yang mudah mengalami kerusakan pada saat penyimpanan. Hal tersebut disebabkan oleh adanya proses respirasi, prosuksi etilen dan transpirasi yang tinggi pada buah pisang. Salah satu cara untuk dapat meningkatkan masa simpan dan mempertahnkan mutu buah pisang ‘Cavendish’ dapat dilakukan dengan menggunakan 1-methylcyclopropene (1-MCP) dan pelapis kitosan yang dapat menghambat peningkatan laju respirasi, produksi etilen, dan traspirasi yang terjadi didalam buah, sehingga masa simpan dan mutu buah pisang ‘Cavendis’ dapat dipertahankan. Penelitian ini bertujuan untuk (1) mengetahui pengaruh aplikasi 1-MCP terhadap masa simpan dan mutu buah pisang ‘Cavendish’, dan (2) mengetahui pengaruh kombinasi aplikasi 1-MCP dan pelapis kitosan terhadap masa simpan dan mutu buah pisang ‘Cavendish’. Penelitian dilaksanakan di Laboratorium Pascapanen Hortikultura, Fakultas Pertanian, Universitas Lampung. Penelitian ini dilaksanakan pada bulan September- Oktober 2013.Ferdaner Humairah Fazri iv Penelitan ini dilakukan dengan menggunakan Rancangan Teracak Sempurna (RTS), dengan perlakuan yang disusun secara faktorial 2 x 2. Faktor pertama adalah kontrol (tanpa 1-MCP; M0) dan dengan 1-MCP (M1), sedangkan faktor kedua adalah kontrol (tanpa kitosan 2,5%; K0) dan dengan kitosan 2,5% (K1). Pengamatan dilakuakan terhadap perubahan stadium, susut bobot, tingkat kekerasan buah, kandungan padatan terlarut (0Brix), dan kandungan asam bebas. Hasil penelitian menunjukkan bahwa (1) aplikasi 1-MCP secara nyata mampu menghambat pemasakan dan penurunan mutu buah pisang ‘Cavendish’ dibandingkan dengan kontrol dengan cara memperlambat perubahan stadium, susut bobot buah, kekerasan buah, 0Brix, dan kandungan asam (2) aplikasi kitosan terhadap buah yang telah diaplikasi 1-MCP lebih mampu memperlambat pemasakan dan penurunan mutu buah pisang ‘Cavendish’ tetapi menyebabkan perubahan warna kuning buah tidak sempurna.
