ABSTRACT Coliform bacteria is a normal flora in the intestines of humans and will cause disease when it enters into other organs or tissues. These bacteria are easily spread by contaminating water and contaminated materials that come into contact with it. If bacterial contamination was found in a food, it is an indication that the food is contaminated by human stool. This can occur in traditional snacks black cincau. Generally, traders who sell cincau in traditional markets is not care the aspect of cleanliness of the place and sellers causing cincau does not keep the health requirement. Such conditions allow black cincau can be contaminated. The purpose of this study to detect contamination coliform bacteria in black cincau that sold at traditional markets and supermarkets in Bandar Lampung City. Detection of coliform bacteria research was conducted by coliform bacteria identification test. The results showed that of the 7 samples cincau sold in traditional markets gained 2 sample (27%) who had not contaminated by bacteria and 5 samples (36%) contaminated by the bacteria Escherichia coli, Klebsiella sp. dan Salmonella sp. Then from 4 samples that are sold in supermarkets cincau obtained 2 samples who had not contaminated by bacteria and 2 sample contaminated by the bacteria Escherichia coli and Citrobacter sp. Conclusions, there have coliform bacteria contamination on the balck cincau sold in traditional markets and supermarkets in Bandar Lampung city. Key words: coliform bacteria, black cincau. ABSTRAK DETEKSI BAKTERI COLIFROM PADA JAJANAN PASAR CINCAU HITAM DI PASAR TRADISIONAL DAN SWALAYAN KOTA BANDAR LAMPUNG Oleh RYAN FALAMY Bakteri coliform merupakan flora normal didalam usus manusia dan akan menimbulkan penyakit bila masuk kedalam organ atau jaringan lain. Bakteri ini mudah menyebar dengan cara mencemari air dan mengkontaminasi bahan-bahan yang bersentuhan dengannya. Jika didapatkan kontaminasi bakteri ini pada suatu makanan maka merupakan suatu indikasi bahwa makanan tersebut pernah tercemar oleh kotoran manusia. Hal ini dapat terjadi pada jajanan pasar cincau. Umumnya pedagang cincau yang berjualan di pasar-pasar tradisional tidak memperhatikan aspek kebersihan tempat dan penjual sehingga menyebabkan dagangan yang dijual tidak memenuhi syarat kesehatan. Kondisi yang demikian memungkinkan cincau dapat tercemar. Tujuan dari penelitian ini untuk mendeteksi kontaminasi bakteri coliform yang ada pada cincau hitam yang dijual di pasar tradisional dan swalayan kota Bandar Lampung. Penelitian deteksi bakteri Escherichia coli dilakukan dengan uji identifikasi bakteri coliform. Hasil penelitian menunjukkan bahwa dari 7 sampel cincau yang dijual di pasar tradisional didapatkan 2 sampel tidak terdapat bakteri dan 5 sampel terdapat bakteri yaitu Escherichia coli, Klebsiella sp. dan Salmonella sp. Kemudian dari 4 sampel cincau yang dijual di pasar swalayan didapatkan 2 sampel yang ridak terdapat bakteri dan 2 sampel terdapat oleh bakteri Escherichia coli dan Citrobacter sp. Simpulan, terdapat pencemaran bakteri coliform pada cincau yang dijual di pasar tradisional dan swalayan di kota Bandar Lampung. Kata kunci: bakteri coliform, cincau hitam.
