Abstract
Di Indonesia air kelapa semakin meningkat, namun pemanfaatannya belum maksimal. Oleh karena itu peneliti mempunyai alternatif yaitu pembuatan gula merah dari bahan air kelapa dengan cara penguapan. Penelitian ini bertujuan menguapkan sebagian air kelapa dengan menggunakan prinsip rumah kaca, membandingkan laju penguapan di dalam rumah kaca dengan penjemuran dan membandingkan laju penguapan air kelapa pada wadah alumunium dan plastik. Meteode penelitian yang dilakukan yaitu, pertama pemilihan bahan, kedua pemilihan wadah, ketiga pengaturan ketebalan, dan keempat penjemuran. Hasil penelitian menunjukan peroses penguapan pada rumah kaca cendrung lebih cepat 374 gram/jam dibandingkan dengan laju penguapan di luar rumah kaca 335 gram/jam. penggunaan wadah aluminium cenderung lebih cepat 195 gram/jam, dibandingkan dengan menggunakan wadah plastik 178 gram/jam, suhu tertinggi pada rumah kaca 53 oC. abstract bahasa inggris In Indonesia, coconut water is increasing, with a growing number of oil production per year, but its use is not maximized. Therefore, researchers have an alternative that is making brown sugar made from coconut water by evaporation. This study aims to evaporate some of the water coconut using the principle greenhouse, comparing the rate of evaporation in the greenhouse with drying and comparing the rate of evaporation of coconut water on aluminum and plastic containers. Research methodology, namely, the first choice of materials, both container election, setting the thickness of the third, fourth and drying. The results showed the process of evaporation in greenhouse tends to be faster 374 grams / hour compared to the rate of evaporation outside the greenhouse 335 grams / hour. use aluminum containers tend to be faster 195 grams / hour, compared to using a plastic container 178 g / h, the highest temperature in the greenhouse 53 oC
