ABSTRAK PERBEDAAN RERATA KOLESTEROL TOTAL SERUM SEBELUM DAN SESUDAH PEMBERIAN MINUMAN SARI BROKOLI TERFORTIFIKASI SERAT INULIN PADA MAHASISWA OBESITAS DI FAKULTAS KEDOKTERAN UNIVERSITAS LAMPUNG Oleh ALYSSA FAIRUDZ SHIBA Prevalensi obesitas terus mengalami peningkatan. Obesitas di usia remaja telah dikaitkan dengan beberapa komorbiditas di usia dewasa. Hal ini terkait dengan tendensi obesitas menyebabkan hiperkolesterolemia. Bahan yang diperkirakan bisa menurunkan kolesterol adalah serat pangan, contohnya inulin. Inulin telah menjadi bahan fortifikasi untuk minuman sari brokoli yang juga tinggi serat. Tujuan dari penelitian ini adalah untuk mengetahui perbedaan rerata kolesterol total serum sebelum dan sesudah pemberian minuman sari brokoli terfortifikasi serat inulin pada mahasiswa obesitas. Metode penelitian ini adalah quasi eksperimental dengan rancangan one group before and after. Populasi penelitian adalah seluruh mahasiswa obesitas di Fakultas Kedokteran Universitas Lampung dan sampel penelitian berjumlah 35 orang yang diambil dengan menggunakan teknik consecutive sampling. Dari hasil penelitian didapatkan bahwa rerata kolesterol total serum sebelum pemberian minuman sari brokoli terfortifikasi serat inulin adalah 173 ± 2,367 mg/dl dan rerata sesudah pemberian selama 28 hari adalah 164 ± 2,047 mg/dl. Kesimpulan dalam penelitian ini adalah terdapat perbedaan bermakna antara kadar kolesterol total serum sebelum dan sesudah pemberian minuman sari brokoli terfortifikasi serat inulin dengan p value = 0,003 Kata kunci: inulin, kolesterol total serum, sari brokoli ABSTRACT MEAN DIFFERENCE OF TOTAL CHOLESTEROL SERUM BEFORE AND AFTER CONSUMPTION OF BROCCOLI EXTRACT DRINK FORTIFIED WITH INULIN ON OBESITY STUDENTS IN MEDICAL FACULTY LAMPUNG UNIVERSITY By ALYSSA FAIRUDZ SHIBA Obesity prevalence tend to incerase. Obesity in teenagers has been associated with comorbidity incidence in adults age. This is related to how obesity can cause hypercholesterolemia. Ingredients that can lower the level of cholesterol serum is dietary fiber, the example is inulin. Inulin has become fortificated ingredients for extract broccoli drink that also contains high fiber. The aim of this study was to determine mean difference of cholesterol total serum before and after consumption of extract broccoli drink fortifie with inulin on obesity students. This research was quasi experimental with by one group before and after design. Population in this study was all obesity students in Medical Faculty Lampung University. There were 35 sample taken from population with consecutive sampling technique. The results show the mean of total cholesterol serum before consumption of broccoli extract drink fortified with inulin is 173 ± 2,367 mg/dl and mean after 28 days of consumption is 164 ± 2,047 mg/dl.
